Graduation & Soup
My oldest daughter Katie graduated from college in December. Although we went out to dinner and toasted with champagne, and capped off the evening with ice cream sundaes, Christmas, New Years and then Jill's birthday all crowded out celebrating with friends. Finally, with only a day until Jill was to go back to CSU, we did the mad scramble, pulling together a party at the last minute, to celebrate with family friends, school friends and family. But the dilemma was what to serve 15 hungry people on a cold January night? ok, so it wasn't a tough call--some sort of soup was definitely called for. But which soups? I was torn~a nice French cassoulet sounded so wonderful, and brought back memories of eating it for the first time in a little bistro in Carcassonne, France with my husband, Charles. Or maybe a nice navy bean soup, which my mother used to make. Or perhaps I would make a butternut squash soup, which, for some reason makes Katie laugh, so that's out. So what did I choose? Chile. Chunky, deeply satisfying chile, in two colors:
Black Bean and Sirloin Chile
San Juan Green Chile
Corn Muffins
Fresh Flour Tortillas (from the tortilleria, on Federal)
Fresh Pineapple
Mixed Greens with Gorgonzola & Spicy Pecans
Ice Cream Sundaes (of course)
