Almond Roll
It's new year's day and at my house, that means almond roll. This recipe was developed in response to Charles' request when we were newly married for this dish. He had grown up eating it, though his mother didn't really know what he was wanting when I asked, which meant that my target was elusive. At the time, Charles worked with a man whose family celebrated the Jewish sabbath every week. We had been invited over for dinner the day before sabbath, and I watched Ruth make something called Swedish Tea Log for her family that they often ate for sabbath. It was delicious. She generously shared the recipe with me. Not long after, I started to mess around with her recipe, trying to develop something that resembled what Charles was hoping for. Eventually, I came up with this, using Ruth's dough recipe and a simple filling. It was exactly what he was hoping for.
Almond Roll

Dough
1 pkg dry yeast
1/4 c warm water
2 1/4 c flour
2 tbsps sugar
1 tsp salt
1/2 c butter
1/4 c evaporated milk
1 egg -- beaten
Filling
1/2 c butter
1 can almond filling
Frosting
2 tbsps butter
1 c powdered sugar
1/2 tsp vanilla extract
2 tbsps evaporated milk -- may need less
For dough: soften yeast in warm water. Set aside. Sift flour, sugar & salt together. Cut in butter until fine. Add milk & egg. Beat to combine. Cover and refrigerate overnight.
Roll out dough on floured surface to large rectangle. Cream almond filling and butter. Spred evenly over dough. Roll up lengthwise as you would for cinnamon rolls. Transfer roll to a greased baking sheet, in a crescent shape. Slash top diagonally every 3 inches. Cover with plastic wrap and allow to rise 45-60 min. Bake at 350 25-30 minutes or until golden.
For frosting: Brown butter over low heat, being careful not to burn. Add powdered sugar & vanilla. Stir in milk to spreading consistency. Drizzle or spread frosting over warm roll.
