Huevos, Tacos, and Cabo

We love to travel. We love to explore new places, try new foods, meet new people and immerse ourselves in new cultures. And we tend to overdo it all. When we travel, we hit the ground running and rarely let up. Though we know from experience that some of the better memories we have from past vacations were times when we slowed down and watched the world go by, enjoying the people-watching, sipping wine, and just being, we don't do it nearly enough. But earlier this year, I began to get the urge for an old-fashioned beach vacation. You know the kind of vacation I mean: lazy days sitting in the sun, your feet pushed in the sand, a good book in your hands, and a cold drink close by, waves crashing rhythmically, sand in your swimsuit and in your sheets. It's heaven. And it was time, way passed time, for one of these vacations. Though we'd considered several different options, San Jose del Cabo was the place we ended up. And it was. Heaven. The beach was empty, the water warm, the sun perfect. And the food! Every morning we ate huevos rancheros, with fresh tortillas, frijoles, salsa, cheese & chorizo, all while sitting at a little table on the patio, overlooking the beach. After a couple of days, we found a little street with several tacquerias, where we tried tacos of tongue, conchita pibil & abobada, quesadillas of squash blossom, cactus & rojos. All for a buck each. We found a road side place, run by a fisherman ex-pat, where we ate ceviche & fish tacos. And we swore to go back next year.
