Basil, Oregano, Marjoram, Chives & Tomatoes

Ah, the love/hate relationship that I have with July! The earth is cracked from lack of moisture and the air is brittle with heat and ozone. I can barely keep up with my family's demand for ice and ice cream. And yet...the first tomatoes of the season are ripening on the vines in my garden and herbs are flourishing: rosemary, chives, basil, marjoram, oregano, thyme...I snip one or two of them almost nightly and enjoy their fresh, heady flavors in salads, marinades, drinks, flavored butters or anywhere else that seems interesting. Tonight's menu uses chives in the salmon pate, fresh oregano in the chicken marinade, fresh marjoram on the fresh tomatoes, and freah basil in the potatoes. There's a lot to like about July after all.
